How a vegetable hater does Keto ...

My husband and I discovered this winter and spring did a number on both of us. Something serious needed to be done ... I started walking but he took it to the next level.

Several of his co-workers signed up for a program in our area which tracks progress weekly, like Weight Watchers, but following more of the Keto diet plan. He is limited to 8 grams of protein per day, no sugar, no fruit, no dairy, no alcohol. No exercise is involved. After a week of seeing his success (11 lbs in 2 weeks) I decided to join him, but didn't want to pay the money for the weekly reporting.

I'll eat fruit all day every day and will be a very happy girl. Vegetables .... not so much. So a plan where unlimited vegetables are welcomed is tough. I found a Apple app called Lifesum where I could track my eating , exercise, water intake and weight loss. It tracks my carbs, protein and fat under the Ketogenic Strict plan. Since Monday, I've lost 4 lbs without my daily walk (it's been raining like crazy and I'm a fair weather walker).

Overall, the plan isn't difficult, I'm a meat eater! Last night's wedding was tough with all those delicious mashed potatoes hanging around ... but salad, prime rib and salmon worked just fine! 

I'd love to hear about your favorite Keto recipes ... I even got a little desperate last week when I cooked rhubarb with water and Stevia into a very tart sauce to nibble on.
